Whole Wheat Blueberry Pancakes
Pancakes are an all-time breakfast favorite. Here is a healthy recipe that is simple to make and tastes fabulous.
Ingredients :
- 1 1/4 cup whole wheat flour
- 2 teaspoons baking powder
- 1 cup milk, use more if necessary
- 1 egg
- 1/2 cup blueberries
- 1/2 teaspoon salt
- 1 tablespoon artificial sweetener
Directions:
Sift together baking powder and flour. In a bowl beat the egg, add milk, salt and the artificial sweetener. Stir in the sifted flour until just moistened, add the blueberries, and stir to mix in the batter. Batter should not be runny, but just pouring consistency. So you might need slightly more than a cup of milk, a quarter cup more should do the trick.
Set a heavy-bottomed skillet to heat over medium flame and spray with cooking spray. Pour roughly 1/4 cup of the batter onto the skillet. Cook the pancake until bubbly, for about one-and-half minutes. Flip over and continue cooking on the other side until golden brown.
Makes 10 pancakes.
