Bean Minestrone Soup Recipe
1 can drained and rinsed red kidney beans
1 can drained and rinsed cannelloni beans
1 diced carrot
1 cup diced tomatoes
1 tsp olive oil
½ onion
500 g vegetable stock
1 cup water
½ tsp dried oregano
½ stick chopped celery
100 gm fresh spinach
1 clove crushed garlic
½ cup corn (can use fresh peas too)
½ cup pasta or macaroni
Crushed Pepper to taste
In a large pot, heat the olive oil and add chopped onions and cook until soft, add the crushed garlic and cook for a minute. Next, drop the beans into the pot, add the carrots and celery. Stir and cook for two minutes. Add water, vegetable stock, oregano and simmer on low heat for a few minutes. Lastly add the pasta, tomatoes and spinach. Stir and let the pasta cook for about five minutes. Serve hot, seasoned with crushed pepper and grated cheese if you like.
Chilled Pea Soup with Fresh Herbs
1 tbsp olive oil
2 sliced white onions
2 cups low sodium vegetable broth
1lb frozen peas
¼ tsp salt
Freshly ground pepper to taste
2 cups fresh spinach
¼ cups fresh chives
¼ cup fresh mint
1 tbsp fresh tarragon
2 tbsp fresh parsley
3 ounces goat cheese
Heat a saucepan with olive oil. Toss in the onions and cook till translucent without allowing them to turn brown. Add the vegetable stock and increase heat. Add the peas and cook for about 7 to 8 minutes, stirring continuously. Next add the spinach and let it cook for a couple of minutes. Remove from heat and let cool. When the soup is slightly cool add the parsley, tarragon, mint, chives, pepper, salt and goat cheese. Blend into a smooth puree and serve chilled.
Chicken & Corn Soup Recipe
1 BBQ chicken shredded
1 can corn
1 can creamed corn
5 chopped spring onions
1 cup macaroni pasta
6 cups low sodium chicken stock
2 tbsp corn flour mixed with water
Heat the chicken stock in a pot and when it begins to boil, add both the cans of corn, pasta and simmer for a while. Next, add the spring onion and shredded chicken. Let simmer for a while. Add the corn flour mixture stirring continuously till the soup thickens and remove from heat.
Healthy Blended Soup Recipe
1½ cup corn
1 red bell pepper
1 zucchini
2 celery stalks
½ cup water
1 tsp garlic powder
1 tsp onion powder
A dash of cayenne pepper and nutmeg along with salt and fresh ground pepper to taste.
Very lightly steam corn, bell pepper, celery and zucchini. When slightly cool, blend with salt, pepper, nutmeg and cayenne until smooth. Garnish with sliced cherry tomatoes, avocado, boiled corn and cilantro.
Mixed Vegetable Soup
1 large sliced onion
1 clove crushed garlic
2 turnips chopped or 1 medium sweet potato chopped
2 large courgettes cut into pieces
200g curly kale
Handful of spinach leaves
600ml vegetable stock
In a saucepan, cook the onion and garlic with a little water for four minutes. Cook sweet potato or turnips for three minutes. Add the vegetable stock and let simmer for about ten minutes. Add chopped courgettes and kale and let simmer for five minutes. Lastly add the spinach and cook for another minute. Blend the soup mixture till smooth. Add salt and pepper to taste and garnish with parsley.
