Tomato Celery Juice
Here is the best way to use up your tomatoes in the garden. Tomato juice contains a wide variety of nutrients, it is known for its Lycopene content, a phytonutrient that helps prevent certain cancers.

- 3 pounds very ripe garden tomatoes, cored, chopped
- 1 cup celery with leaves, chopped
- 1 tablespoon honey
- 1/4 teaspoon kosher salt
- 1/4 teaspoon Tabasco sauce (optional)
- Place all ingredients except Tabasco sauce in a large non-reactive pot (stainless steel). Bring to a simmer and cook uncovered, until mixture is completely soupy, about 20-25 minutes.
- Force mixture through a fine sieve. Cool completely.
- Pour in glasses and garnish with celery. Add 1-2 drops of Tabasco sauce, if desired.
- Serve.
