Slimming Coconut Muffins
(makes 12 muffins)
- 1 ½ cups all-purpose flour
- 1 cup oatmeal
- ½ cup sugar
- 1 tbsp. baking powder
- ½ cup raisins
- 1 cup non-fat milk
- ¼ cup melted coconut oil
- 1 egg, lightly beaten
- 1 tsp. vanilla
- Heat oven to 400F. Spray muffin tin with cooking spray or use liners.
- In large bowl mix flour, oatmeal, sugar, baking powder and raisins.
- In small bowl blend milk, oil, egg and vanilla. Add to dry ingredients and stir until moistened.
- Fill 12 muffin cups 2/3 full and bake 18-20 minutes.
- Cool and remove from pan.
